Vegan Protein Pancakes
I LOVE PANCAKES. Seriously my favorite meal ever!
That seems to be a staple in my household on Sunday mornings. It’s my rest day and I get lots of carbs! So, why not make some delicious pancakes, loaded with protein? Kid-approved, too!
I always make homemade pancakes, that way I can load it with the nutrients I want. I ALWAYS use an oat base, grinding old-fashioned or rolled oats, to create my “flour” mixture.

Mommin’ ain’t easy...
So, it’s super tough to balance mom life, fitness life, business owner life, and my client schedule… Today, I was up at 3:45 AM, to the gym by 4:15, got my workout in before my 5 AM client, was home by 6:15 with coffee made by 6:30. The struggle is so real! But if you want it bad enough, you can do it! No excuses! Whether that means going to sleep earlier, waking up earlier, doing an active day with your kids… You can do it!
On that note, I want to talk about preparations…
